Most commonly used on B, J, Q and S Series 600 lb cubers and larger.  The 208-230v Manitowoc water inlet valve kit contains fittings for both John Guest and threaded water inlet adapters.

What does  this ice maker part do?

This part is a normally closed valve, but when powered with 208v will open, allowing water through.  Once the water inlet valve is opened, water will begin to fill the water trough.  The water valve is controlled by the control board, which is regulated by a water level probe.
